I am married to an Austrian from Lausanne. To start with Tyrolean cuisine was foreign to me but now I like the cuisine it is substantial but good. Topfenblattln’s taste is sour and sweet.

Ingredients List of ingredients with quantity.
400 g (Topfen) quark, 300 g flour, 20 g butter (melted), 1 egg, whole cumin, salt, 1 1⁄2 litres of vegetable oil for frying.

Steps
For the dough: Knead all the ingredients together to make dough and let it stand for 1 1⁄2 hours. Then roll out the dough on a floured surface (about 2mm thick), cut into squares or rectangles (about 5 cm each), fry the blattln in the hot oil until they are light brown. They are suitable either with Sauerkraut or applesauce.

You could use curd cheese crumbs, or if your want low fat lean ingredients use egg yolks instead of whole egg, or season with nutmeg, parsley and white pepper.
