Rhubarb Cruble

I chose my recipe because I love rhubarb. I have it growing in my garden; it is very easy to grow.

Golden castor sugar
1 tsp of fresh grated ginger (optional)

For the crumble:
Self raising flour
2 tsp of cinnamon
110 g of demerera sugar
55 g of crushed almonds
75 g of chilled butter cut into squares

Wash and cut up rhubarb making sure ends we trimmed add castor sugar and a good sprinkle of water, place on baking sheet and put in preheated oven. Crumble: sift ½ flour into a bowl add the cubed butter and almonds, using your hands rub the mixture together until it resembles fine bread crumbs.

Take rhubarb from oven and put in baking dish then add a layer of the mix and flatter it with the back of the spoon. Add the remainder on top mixed in with the demerara sugar. Bake in oven (gas 400 – gas mark 5, middle shelf). Far 40 minutes approx.
