175grms Stork vegetable spread (any make minimum 70% fat)
175grms golden caster sugar
200grms self-raising flour
1 tsp baking powder
2 tbls milk
Finely grated zest of 2 lemons
Heat oven to 180 (fan 170/350F/gas 4)
Cut 2 baking parchment circles. grease and line with circles 2 20cm (8”) sandwich tins.
Put spread, sugar, zest, flour, baking powder, milk, eggs in a mixing bowl, using a mixer on low Speed beat for 1 – 2 minutes until smooth.
Divide mixture equally between prepared tins and level top.
Bake for 25miniues until cakes are well risen and golden. Rest for 2 minutes then remove from tins, peel off lining paper and cool on wire rack.
40g butter, 8 tbls icing sugar, lemon juice mix together butter and icing sugar with a fork to stiff paste, add a little lemon juice at a time mixing until softer and paler.
Spread lemon curd on one layer and butter icing on the other, sandwich together with lemon curd on the bottom. Dust with icing sugar.
