I have chosen fish cutlet as my recipe because it is a traditional dish in my country. In Sri Lanka we cook it mostly for all occasions. Fish it is cheap to buy in Sri Lanka, also whoever doesn’t like fish, especially kids, tends to eat and like fish cutlet. It is healthy diet, available in most of the restaurants and takeaways in Sri Lanka.

1 tin fish (tinned mackerel/tuna), or 5-6 fresh fish, ground black pepper, 1 lemon, 500 g potatoes, 1/4 teaspoon tur- meric, 1/2 tablespoon salt, bread crumbs, salt, 2 eggs, frying oil, 10 green chillies, 1 red onion..
Boil the potatoes with the skin in a pan, after boiling peel off the skin and mash the potatoes. Clean the cooked fish or fish in a tin, add mashed potatoes, chopped onions, chopped green chillies, squeeze one lemon, add turmeric powder and ground pepper. Mix all together; make them into small ball shape. Soak the balls into egg white and sprinkle bread crumbs to cover it fully. Heat the frying pan with oil, put the cutlets and fry until brown.
