1 kg basmati rice
1 tin of peas
1 bunch of fresh thyme
Pinch of salt
4 tablespoon of paprika
4 cloves og garlic
2 slices of ginger or 2 tbps of ginger powder
2 tablespoon of coriander
1 tin of coconut milk
Cayanne pepper to taste
1 tin of tomatoes
1 Scottch bonnet pepper
100 g okra
Chop vegetables, onion, pepper, okra. Wash chicken and then season with paprika, curry powder, garlic, ginger and coriander. Place 5 tablespoons of oil in the pan and then add the chicken.
Fry and seal the chicken for 5 minutes, add onion pepper garlic and ginger. Fry for ten minutes. Reduce heat from high to medium, add 1 cup of water and simmer for 20 minutes. Add tomatoes and coriander and a teaspoon of salt to taste.
Place lid on the pan and simmer for a further 20 minutes. Lighly boil the okra separate in a pan. Wash the rice to get rid of starch. Place 3 ½ cups of water above the rice, then add black eyed peas or kidney beans.
Add coconut milk, thyme and a pinch of salt to the pan. Bring it to boil until little air holes appear in the rice, then reduce heat to low temperature. Place lid on top of the pan and steam rice for a further 10 minutes.
Serve rice with chicken and okra.
