Personal story
This is a very simple recipe and it is very delicious. I like to make it when I have visitors. Borek is a Turkish variant of a casserole of pasta with a spicy filling of spinach and cheese. Variations with different types of pasta and/or preparation methods are very popular in the Balkans. It is an everyday dinner and can also be good as a cold snack.

Plant / Natural ingredients used List of ingredients with quantity
300 gr of fresh spinach, 1 onion, 200 gr of Goats cheese or feta cheese, 2 sheets of thin pastry(can be bought in the supermarket), 200 ml milk, 125 gr yogurt, 1 tsp of paprika (mix of spicy and sweet), 1 tsp of salt, 20 gr of melted margarine, 15ml sunflower oil or Olive oil.

Wash the spinach, chop it and mix it in with the crumbled feta cheese. Chop the onions into cubes and fry with a drizzel of olive oil until they are translucent. Then mix together with the spinach and cheese. In a small bowl mix the yogurt, milk, melted margarine, salt and pepper. The mixture is brushed on the pastry sheets. The filling is spread on the sheets, folded and pressed. Heat oil in a pan on a medium heat and put the pan pastry in the pan. Fry on both sides until the pan pastry is lightly browned. This will take about 10 minutes., cover and leave on a low heat. When one side is brown, it is turned over using a saucepan lid or a large plate. Allow to brown the other side. And when cooked serve on a plate.

Serve it hot or warm. The leftovers also taste good cold. You can also freeze and reheat it again. You can also prepare Borek with potatoes or minced meat. For this the potatoes have to be cooked and seasoned with grated cheese, parley and salt. The meat has to be browned and seasoned. Fresh spinach is the best, but you can use frozen. When it is frozen it can lose most of the vitamins but it is much more lasting than fresh spinach.

Spinach is an excellent source of iron, it can make you big and strong if you eat a lot of it. In a lot of diets, we use this delicious recipe with spinach, because spinach is very low in calories.
