Changua is a typical breakfast in Bogota, the capital of Colombia. In Bogota, Changua is served for breakfast with bread on the side, but this soup can be eaten at any time of the day. It is also known to help with a hangover, so you can try it after your next party.
Since I was a little girl I remember my father eating changua caballuna each morning, so not only after long nights of partying and drinking. He always added a lot of garlic, because garlic was supposed to be very good for health according to him. I believe that might be true, as my dad, despite being 70 years old, looks like he is in his 50s, and I began to think that this may be because of the changua lunga.
In addition to this, changua caballuna is also an essential part of every Christmas Eve party, anniversary or birthday celebration. Usually on this occasions a lot of alcohol is consumed ,so if one wants to start the next day normally, feel refreshed and fueled with energy, this soup makes perfect meal for breakfast

4 cups milk, 2 cups water, 4 eggs, 1⁄2 cup chopped fresh cilantro, plus more for serving, 3 scallions chopped, salt and pepper.
Place the milk and water in a medium pot and bring to a boil. Add the onion, salt and pepper and cook for 3 minutes. Reduce the heat to medium and add the eggs without breaking them.
