Personal story
In Turkey, there are no bread with spices. There are special Austrian bread with spices, diced and fried in a pan with a little oil, they are then added to soup before serving. In Turkish cuisine, there are many different types of yogurt soups,to which all kinds of grains and herbs can be used.

Ingredients (List of ingredients and their amounts)
For the soup: 600 ml yogurt, 150 grams of flour, 75 grams rice, 3 egg yolks, 1 liter of hot water, 1 tablespoon of stock. For the garnish: 50 grams butter, salt, pepper, 1 tablespoon chopped fresh/dried mint, 1 tablespoon dill/thyme.

Steps
The soup: Rinse the rice under running water briefly and drain. Cook for 15-20 minutes the rice in a small pot with salt and water until it is cooked. In a bowl mix the yogurt with the flour and egg yolks until they are smooth. In a large cooking pot, stir the yogurt mixture and gradually pour in. This will be set aside for a while. Stir a little of the hot water in a bowl with a little of the yogurt mixture and pour into the pot. Then slowly pour in the remaining water and continue stirring. Then add the rice and stock, salt and pepper to taste.

The garnish: Melt the butter in a pan and stir in the mint. Chop fresh herbs into fine strips and add to the butter. Be- fore serving, crush the peppermint well in your hand, season with salt and pepper and add it to the soup.

The soup tastes very good with a little lemon juice or sour yogurt. The constant stirring is very important because the yogurt will curdle. At the end, the soup can be brought to the desired consistency with a little broth or water. (It can thicken through cooking).

It is a healthy light soup with low calories, yet filling. The yogurt soup relaxes the muscles and helps with the digestion. After consuming, you will sleep particularly well and in the morning you will be in top shape. My children love to eat soups and I cook them weekly.

In winter the soup is eaten hot, and cold in the summer.
