Mexican style Bombay potatoes

The recipe comes from Mexican and Indian cooking. I made the dish from a mixture of left over Indian and Mexican ingredients

Ingredients (List of ingredients and their amounts)
2 red onions, 1 pepper, 1 jar of passata (500g), 40g fresh coriander, 2 teaspoons of salt, 400g of baby potatoes, 2 tablespoons of mustard, 10g butter.

Boil baby potatoes with salt. To make a spicy sauce, heat oil first, then add the garlic and the red onions, let it cook for few minutes. Add jar of passata to the garlic and onions and let it cook on low heat for 10 minutes. Once potatoes are boiled, heat the butter in separate pan, add mustard seed and mix together. Cook for 5 minutes. Now add the red pepper and red onion and stir fry for a few minutes. Get a baking tray, put the spicy sauce first and then your vegetables and put it in the oven for ten minutes. Put fresh coriander on the top when it is ready.
